Porco Rosso!

  • this sounds like a wonderful dish - pork loin dusted lightly with a breath of flour then gently browned in garlic scented oils - to be quietly placed in a simmering pot of dry red wine broth which has been delicately spiced with herbs - this is left to simmer for several hours so that the meat literally falls apart at the touch - the broth has become a thick sauce now to which a healthy amount of wild mushrooms is added once the meat has been removed - it is served on fresh bolillos from your local panaderia drenched in the mushroom sauce
